For example, on a dental clinic listing website, I would like to change the email address to be sent to when making an appointment for each dental clinic.
Are other features supported for websites with such listings?

Sure, you can configure shortcodes, so only services from one category are displayed, or only services provided by a certain employee, or a single service.
As for Events, you can add tags to your events, so if there are 5 events with the tag "january" and 10 events with the tag "february", you can create a shortcode like [ameliaevents type=list tag='january'], so only the events with this tag are displayed.

I'm not sure I understand your question. Whose email address do you want to change when making an appointment - the customer's or the employee's?
The customer's email address is changeable unless the user is logged into WordPress or Amelia's Customer panel. Also, if the "Check name for existing email when booking" is enabled in Amelia's Role Settings/Customer - a customer won't be able to change the name associated with an existing email address for next bookings.
If you want to change the email of the employee during the booking process - that's not possible, as the appointment is assigned to the employee once the employee is selected or once the time slot is selected, depending on how you configure the plugin.
Listings are not available in Amelia, but could you please explain how you'd use them with a booking plugin?
