We have Stripe and Paypal as payment gateway. We are adding more payment gateways soon as you can see on our Roadmap https://trello.com/b/t7H6cyEh. Our knowledgebase link is https://help.billed.app.
Billed is multilingual and available in many languages.

Italian and Spanish?
Can we add custom taxes, and discounts per line?

Yes, we do have Italian and Spanish Languages. You can add custom taxes per line item but discounts are applied on the whole invoice.
