1) Good point ! We started with a kind of "step by step" process but many other clients asked more flexibility on that feature. They wanted to be able to handle mistakes or steps that need to be skipped in some situations. So I definitely approve your suggestion but it seems that we need to think about it and take into account other feedbacks.
