Is there a way to have multiple choice questions in a form, and have a cap / limit of how many times each response may be chosen, before it either disappears or is grayed out?

Use case scenario: creating a form for conference attendees to choose their sessions. Once a session is full (determined by room capacity which we would but as the cap in the response), it needs to be removed.
