I want to create pdf templates which clients can then customize with their own words and/or pictures which will be mapped to fields on the pdf and when done output a personalized pdf for them, can it be done with your software?

Using a custom template is currently not possible. The logo can be changed on the PDF files, but that’s pretty much it.
The rest is simply text (info from the fields).
This may be an interesting feature in the future.
