Does this mean we put the customer front end on DigitalOcean/Vultr or someone else and Velocity MTA on a different host? If so which hosts do you recommend?

You could just run the platform on your ServerMania server also, in case that wasn't clear.
The main distinction here is just that people not using the MTA (most people) can just use Digital Ocean and connect Mailgun, SparkPost, Amazon SES, etc.
