Q: Is it one user per domain?
Let's say I have two different consulting businesses where I'm the sole worker. Can I use two different calenders in one account? Does this one account have to share the custom domain? Or can you use several custom domains for different calendars?

it's a custom domain per one user. So if you have two businesses and want to share the same custom domain, you can create Meeting Types for each of the businesses and use the same custom domain and the same account.
You would just have to share your two businesses online calendars into a single account and connect it to Harmonizely.
