Is it against TOS for us to use our own checkout outside of HS since stripe is not accepted in my country?

What does remove branding consist of? Is it just the one logo? Is it whitelabel?

1) Regarding streaming fees - absolutely not :) We don't charge for any streaming fees at all. Of course if you host your recorded videos say via Wistia, then they themselves have a revenue model whereby I believe they charge - but we never charge ourselves. It's also worth noting that if you want to broadcast a talk live then you will need to link your Zoom or BigMarker account - and these do obviously require you to have a paid account with them. We will be adding additional live broadcasting options and video hosting options as soon as possible though to cover the cases where users dont want to use one of our current providers.
2) We plan on releasing support for VooPlayer either later on today or tomorrow ;)
3) You asked for a clear breakdown of potential fees for this LTD (aside from the purchase price). Essentially, if you run a summit with pre recorded videos and dont intend to charge your attendees, then there are literally no other fees applicable. However, if you plan to charge your attendees for access (such as an all access pass style option) then we take a 1.5% transaction fee to process these payments. If you need additional control over this, we have an offer to upgrade to our Business plan (with prices starting at $10 a month - down from the usual $249). If you take this option then you can link your own Stripe account (with other carts being added in the future) and consequently, there is a 0% transaction fee there.
The only other charge you might want to consider is one that we dont directly charge ourselves but that you might be charged indirectly for, via one of the webinar or video providers we integrate with. As noted above - if you host videos say through Wistia then they have a paid model. You can mitigate this cost by using YouTube or Vooplayer (which is coming later today or tomorrow).
4) With regards to additional attendees. Effectively just like if you were managing an email list via Mailchimp, you are charged for the qty of attendees you have. Its similar here. If you go over the limit on your account we will provide you with add-on options, which you can cancel at any time should you need to. We'll be providing more clarity on what these costs will be in the coming days - but for AppSumo customers they are being designed to be low cost.
If you feel you might need additional room to grow, in terms of Attendees, then I definitely recommend taking advantage of the stacking options here as that provides without doubt, the value way to boost your account in that regard ;)
5) Currently all emails are sent out via our own SMTP, but we will be adding custom SMTP options very very soon ;)
