Q: Maybe I missed it, but what is a "project" anyhow.
I don't see an explanation, but it appears projects are the basis for your pricing. Sorry if I'm an idiot.

Exactly, the project is the main basis of the product, since, in order to get collect feedback and update users about the made changes, you need to have a project.
That is, team members and users can add feature requests, upvote those, comment or react, see the changelog of the project ( it can be a bug fix, new feature, or announcement).
You can have the Roadmap for any project, so everyone can see, what features are on their way, what was implemented for the exact project you develop currently.
