I'd like to redeem this, but don't want to go through onboarding or setup now. I'm shifting my entire business and don't want to use my existing data going forward. I simply want to redeem and be able to look through the interface and see what all is available and study it. I don't want forced onboarding or setup. Have you made it possible to do this yet? I have a few days to redeem, so obviously I have to be able to do it in that time frame or I would have no choice but to refund or lose my money.

The features explained are not being developed in the current version of the tool. It is developed in a revamped version of the tool which will take some months to launch.
If you’d like to onboard and explore the product, just create or link any dummy GA account/property to create a project.
You can delete projects later after redeeming your codes from Settings > Delete Projects screen.
