so if i bought the plan, i want to give a host seat to my partner for his personal use, will I be able to see/listen to his calls and stuff? or can it be set as a completely separate private workspace for his use?

The Teams management în Meetgeek is independent from the the hosts seats allocation under your License.
The article you reffer to is related to the Team management. So, yes, your partner's account can be a separate account for him to use.
However, if you decide to create a Team in Meetgeek you could benefit from the automatic share it comes with. The Team Lead will see the meetings the other Team members have.
