SCORM v1.2 and SCORM v2004 are supported (you can change versions inside settings when editing the course).
Canvas is SCORM compliant so yes our content would work fine there.
Yes, Open eLMS (this is the LMS and not the AI eLearning creation tool - Open eLMS AI) can be used to replace Moodle in all versions. This is available from our website at www.openelms.com.
