Can I create folders to back up items?
2. If I am syncing from my computer to pcloud, can I sync into created folders?
If no, how then does this work?

Yes, of course, you can create folders and backup them. You can back up any folder from your computer, not just some predefined (like on Dropbox). You can read here: https://www.pcloud.com/backup.html
