Is it necessary to use Gutenberg's "block editor" to use PostX, or would the Classic Editor suffice?
How simple is it to change my site without losing my previous entries if Gutenberg is required?

Yes, it's necessary to use the Gutenberg Block editor to use PostX. But If you want to use our block inside the classic editor you can try our saved template option which will generate shortcode and you can paste that shortcode on your classic editor.
