For instance I set-up a shop now with a COMPANY A and then I want to transfer it later to COMPANY B. Is that possible?

The reason why you can't delete shops manually is that you may want to extract/export certain data for accounting purposes at some point in the future, along with account safety. Learn more here: https://help.sellix.io/en/articles/4500133-how-do-i-delete-my-sellix-account.
While you won't be able to transfer shop ownership, you are able to invite multiple team members and grant them adminstrator/owner-level access to the store.
