I use a pdf parsing software currently that extracts info from pdf invoices based on pattern rules manually setup versus AI. However I have this setup to not only extract things like invoice totals, invoice numbers, shipping costs, etc but also extract the product lines (sku, name, line cost) to a spreadsheet so I can periodically compare costs to ensure the invoiced cost of items match the expected wholesale costs (to catch invoicing errors or supplier pricing changes).

Is there any functionality in this software to achieve that goal or will it strictly extract dollar amounts and overall categories?
