We don't offer cname or whitelabel options as our blue sky vision is to become an open marketplace. If by UI like Udemy, you mean a publicly discoverable course page, then yes. At the moment, it's one lifetime deal per Channel (i.e 'school') so being an admin on multiple creators' Channels would require multiple licenses (this would definitely work with the highest tier, as you'd have multiple team member seats to use). Stripe accounts are set up on the Channel level, so if you had a different Channel per creator, then they could definitely have autonomy over managing their courses and Stripe. And yes, we have a Steppit mobile app, which works both for course-building and for learners to access their courses.
