Let's just say I have five clients I take it each client will have their own individual portal correct? Making it five portals in the situation. Will I see five clients in my dashboard at this point?

That's correct, each client will have an access to their own portal. For now, the portal is mostly a place to send their information, but it is bound to evolve in the future with a few two-way interactions possibilities incoming.
Depending on your use case, you can either create different workflows for each client, or send them the same workflow (if you need to collect the same info from all of them).
