If you use the Personalized Sales Email writer node inside Workflows, you can set something called as the Context where you can include specific instructions you may have. This is just clubbed with the instructions that we already have for the agents. Have you tried this?

You can provide your own prompts and even define structured outputs and use the output while sending emails or to update contact properties. ETA for release is in April.
