Exporting in SRT, TXT,VTT and PDF will be nearly instant whereas exporting MP4 with subtitles embedded will take time which will base on its duration and how heavily the video was cut in the editing platform.

Yes, aside exporting as MP4, you have the option to export the transcript in SRT, VTT, TXT and/or PDF format.
