I am wondering:
(1) if it is possible to get a ping or notification if we have a site visitor so we can proactively initiate a conversations
(2) Can we see what the user is typing before they hit submit (some chat widget apps have this.)
If either of these aren't possible, are they on the roadmap?

So, as for 1) you can actually enable a proactive chatbot through our Rules feature within the no-code Chatbot Design Studio that will intercept your visitors and send tailored pop up messages to encourage the engagement as well as lead generation. More about it here: https://youtu.be/d6fdBDfE2vg
2) currently not on the roadmap, but we're happy to discuss it internally and see what can be done.
