Thank you for your question. To do this;

1 - Add your work G-Calendar with Week Plan
2 - Block out time by adding a task/event/focus time to your schedule
3 - Once done your colleagues won't be able to see /or book that time ( I assume your colleagues will use a scheduling tool like Calendly, which doesn't show already booked/scheduled time from your calendar on their booking page)
