Would this plugin be useful for setting up 301 redirects for transitioning from a WP site to Shopify site in terms of SEO?

Yes, of course. Once you transition, you will probably have some 404 pages and those needing redirection, so the plugin will help you handle everything.
404 pages can be handled automatically, as well as URLs that have similar structure. For others, you will be able to create new redirect rules and make sure people end up on the page they wanted :)
