I found CandyIcons easy, quick & fun to use. The ChatGPT assistant is helpful to come up with ideas on how to describe the icons I'd like created. Importantly, the generated icons look good too.

Suggestions: 1) It would be great to have a repository of the icons I have generated on the dashboard, so I can be 'visually' reminded quickly, instead of having to look through various emails. 2) Also, it would be nice to be able to generate a set of icons based on the same theme.
