We're building BCC email sync as we speak but no other major email integrations near-term. Proper two-way email sync is on the long-term list but it's a significant build, so I won't promise a date.

On the assistant setup: yes, this works. Invite your assistant as a Member into only the pipelines you choose. You can also add an automation that auto-assigns you as deal owner in those pipelines. Members can't delete contacts, deals or companies that you or anyone else created, so your existing data is safe from day one.

However a member can still delete rows they created themselves at the moment. So your assistant could delete a deal they added, but never your contacts or history. A stricter "members can never delete anything" role is on our list, and your use case pushes it up.
