I work as a recruiter so woulmnd't want to add the prospects company when i'm hiring for a client (not going to share my clients URL in a video message)

No you don't have to add prospects company every time, you can use your own company website as the default background on all your dynamic screen recordings. :)

Thanks, not keen to use my own website as it’s a bit old. Can I use their LinkedIn profile or can I use a static page that I create - like a Canva presentation?

Yes! You can definitely use a static page from Canva or any other tool as long as it is hosted on a publicly available URL. Unfortunately we don't support LinkedIn profile screenshotting just yet. :)
