I tired all of them. I speak and write both Cantonese and Mandarin. The 3 Chinese dialects in your apps are all Mandarin.

Let me explain in detail.

Chinese (China)
Voice recognition : Mandarin
Characters(subtitle): Simplified Chinese Character

Chinese (Taiwan)
Voice recognition : Mandarin
Characters(subtitle): Traditional Chinese Character

Chinese (Hong Kong)
Voice recognition: Cantonese
Characters(subtitle): Traditional Chinese Character

In your app, The Chinese (China) and Chinese (Taiwan) both voice recognition and character are correct. You do not need to change anything.

I guess the one “Chinese” in your system should be Chinese (Hong Kong), the correct voice recognition and character should be Cantonese and Traditional Chinese character respectively.
