wpdatatables.com/wp-admin/), probably I am missing something, but when I have created e. g. a "query to WordPress database table" with the "Creation Wizard" this works fine, but when this table is made I can't add new columns and I can't change Columns (change query) using the UI.

When you create SQL Query based tables, you cannot add new columns from plugin's UI, like with Manual tables. However, you can edit the query, and create new columns with it.
