Q: Could i create a store, to sell a limited number of products?
Then later use the same brand and changed the cname to a different URL and website after I had sold all the available products?

Nothing is set in stone.
You can change your branding and CNAME redirection anytime from the dashboard.
In fact, it would be odd if you couldn't have done that.
