I have mulitple brands I manage and do marketing for and I wanted to organize by brand and set up each social account with each brand. Would I be setting up multiple workspaces one for each brand in order to do this? If not please advise on how I can do this.

Yes, it is best to set up separate workspaces for each brand.
This way, you can keep the team and the contents separated and avoid mixing stuff up.
