Is it possible to create Trello-style Kanban Boards using this where I could create complex, color-coded Kanban Boards for different projects?
Also, is this hosted online or would I have to have my own hosting or is this a downloadable program for Windows or Mac?
Is it required I have Zapier or some other accounts to use this? I am looking for only a way to create, save, and edit complex multiple Kanban Boards similar to Trello to organize different tasks within different projects, onboarding processes, and outlines for massive book outlines.

No, it's not a Trello-style Kanban board product. It's not meant for task-level tracking the way Trello is optimized for. Yes, this is hosted online, and no, there is no downloadable app. No, you are not required to use Zapier to use this.
I see what you're going after in terms of having non-linear Trello stages to track your tasks in a visual canvas. That concept was sketched as an option a few years back when we were ideating the general direction of the app, but it took a different direction.
Puzzle is specifically for process and system planning + change management. It's not a place where you track day-to-day tasks; it's a place to build a knowledge base of how processes and systems work together.
I'd recommend not moving forward with Puzzle for your use case. There are better tools out there for task tracking—Trello being one of them!
So, let's say I don't need tracking and only need the ability to create and manage and edit Kanban Boards as in Trello, Kanbanflow, and similar sites, but without tracking, could this do the job and permit that?
And to respond to your other comment, Trello is fine but it has two issues for me: inability to export in Word or PDF, b) recurring payments that can add up after a few years.
