There are several ways to do so, yes. You can use Gmail as the email that receives your digests. You can also set up rules in Gmail to forward your mail to Paced Email. See: https://www.paced.email/articles/how-to-auto-forward-specific-emails-in-gmail-to-paced-email
Some users have even managed to add their aliases to Gmail in order to send via their service too. I’m aiming to test that out and write up an article form it soon.

I like the service and its features, but I am concerned about routing all my email through a service whose credentials I am not sure of.

Everything is locked down tightly, and I hold the encryption keys to be able to send and display your email. Strict access protocols and policies are in place to prevent misuse. As the team expands, I will add internal auditing to record when and why data is decrypted and review that log regularly.
A third-party audit is a good idea. I'll look into getting one conducted soon.
When the time is right, I'll hire some additional support. All my work and projects are written up and will be made available to next of kin etc in particular events.

Yep, Paced Email auto-generates new aliases for you when your domain (or username/in-house domain-based aliases) receives an inbound message. This can be turned off if not required, though.
When it's turned on, you can use the recently released "global settings templates" to set default recipients etc., on each of the newly generated email addresses.
It depends on your current setup, but most likely, it will work. Just read up on the domain docs here for more info: https://docs.paced.email/article/6-adding-a-custom-domain

You asked a similar question on the Vend Email listing. Aliases are not tracked but they're in a database to allow the product to function. If an alias is deleted, it is "soft" deleted for you to be able to restore them. Once you entirely remove an alias, it is marked as securely deleted for other users to have not the possibility of re-creating it and highjacking inbound messages intended for you. This also serves as a way for Paced Email to issue bounce notices correctly.

At the moment, blocking a sender simply ignores the inbound email. I could definitely add a feature to toggle on/off a bounce response if that's more preferable to your use case? Let me know!

It depends on what you mean exactly... You can use Paced Email to get digests to your main email accounts. There are also ways to forward existing newsletter subscription etc to Paced Email to benefit from our productivity tools too.
