Since our users are from EU... Is tracking for users and those who they share the demo with performed through e.g. cookies or server side tracking?
I am asking because, would a cookies notification be necessary? Ideally I'd like to avoid such a pop-up.

Tracking is only tied to an identifiable person once they give you their contact details (form fill, invite, or bulk import). Anonymous viewers are tracked at a behavioral level, without personal data stored against a named individual. And on the capture form itself, you can add your own consent note - so consent is handled right at the point someone shares their details.
If you do want a cookie banner, you can add one as a script to each demo - so it's fully in your control whether to show it.
