Yes, that's exactly what the Bundle option is for. Open the booking type and set its duration to 60 minutes, then go to the Packages tab, turn on "Enable recurring bookings and bundle" and choose Bundle. Set both "Min bookings per package" and "Max bookings per package" to 2, then save.

On the pricing side, the price you set on the booking type is per session, and the client pays the package total in a single payment when they book. So if your rate is $50 a session, your reader picks their two dates, sees a $100 total and pays it once. The minimum of 2 holds them to booking both sessions, so they can't take just one, and they choose the two dates themselves within your availability rather than being locked to a fixed weekly slot.
